We look for producers who cultivate coffee at meaningful altitude, nurture distinctive microclimates, and select varieties for flavour rather than yield. Our partners practise meticulous hand‑picking, disciplined processing, and rigorous quality control at every stage — from fermentation to drying to cupping. Equally important is their commitment to ethical labour, environmental stewardship, and transparent, long‑term relationships. The farms we choose often hold respected certifications such as Rainforest Alliance, Fairtrade, Organic, UTZ, or Smithsonian Bird‑Friendly, reflecting their dedication to sustainability, biodiversity, and responsible farming. Sourced from the sun‑drenched hillsides of the Santos region—resting between 600 and 1,200 metres—these Bourbon and Catuai cherries develop under warm skies and steady coastal winds. It’s a landscape shaped by rhythm and patience, and the coffee grown here carries that same unhurried elegance.

The natural, sun‑dried process allows the fruit to remain intact as it dries, letting the cherry’s sweetness seep deep into the bean. Some coffees lift you gently; others take you higher. Colombia Excelso Huila is crafted for those who chase clarity at altitude. Grown between 1,200 and 2,000 metres in the storied Huila region, these Caturra, Typica, and Bourbon varieties thrive in volcanic soil and cool Andean air—conditions that shape a cup as vibrant as the landscape itself.

At Aviator Coffee Co., our suppliers select only Excelso‑grade beans for their exceptional uniformity and dependable roast performance. The washed process—meticulous, deliberate, and rooted in Colombian tradition—removes the fruit before drying, allowing the coffee’s natural brightness to shine through. The result is a clean, articulate flavour profile that feels as crisp as a clear morning above the cloud line.

The High‑Altitude Echoes of Oromia

Some coffees whisper their origins; others sing them. Ethiopia Natural Djimmah carries the unmistakable voice of its homeland, bright, expressive, and shaped by the ancient highlands of Oromia. Grown between 1,650 and 2,000 metres by smallholder farmers whose craft spans generations, these heirloom varieties thrive in a landscape where altitude, sunlight, and tradition converge.

At Aviator Coffee Co., we source Djimmah lots supported by the Oromia Coffee Farmers Cooperative Union (OCFCU), an organisation that empowers growers with shared processing facilities and rigorous quality standards. The cherries are dried whole under the Ethiopian sun, allowing the natural process to intensify the fruit’s inherent sweetness and preserve the region’s signature clarity. Each batch is carefully sorted and monitored to maintain the clean, smooth profile that defines Djimmah’s reputation.

 

Once roasted, Ethiopia Natural Djimmah reveals a lively interplay of berry fruit, lemon citrus, and warm cinnamon, lifted by a bright, refreshing acidity. A subtle hay‑and‑berry aroma rises from the cup, giving way to a smooth, composed body that adapts beautifully across roast levels.
